Pinch of Nom's Pavlova recipe

    • 3 egg whites
    • 75g caster sugar
    • 50g icing sugar
    • 1 tsp cornflour
    • 1 tsp white wine vinegar
    • 1 tsp vanilla extract
    • 60g mascarpone cheese
    • 60g fat-free Greek-style yoghurt
    • 200g frozen mixed berries defrosted (juice saved)
  • First, prepare some baking parchment for piping the meringue mix onto. Cut it to the size of the air fryer basket. Draw 8 circles approximately 8cm (3in) in diameter and set aside for later.
  • Place the egg whites into a very clean mixing bowl. Make sure there is no egg yolk in the bowl with the egg whites. Start to whisk, using an electric hand whisk, until the egg whites form soft peaks. Add the caster sugar, 1 tablespoon at a time, and whisk until fully mixed in. The egg whites should be stiff and glossy and, when you feel the meringue mixture between your fingers, you should not be able to feel any grittiness (the sugar should be dissolved). If this is gritty, continue to whisk for another minute.
  • Mix the cornflour, vinegar and vanilla together in a small bowl. Pour into the meringue mixture and whisk until combined. Spoon the mixture into a piping bag fitted with a plain or star nozzle.
  • Carefully place the baking parchment in the air fryer basket, ink/pencil side down. You should be able to see the guidelines through the parchment.
  • Pipe one layer of meringue mixture into the first circle to make a base. Make sure you stay just inside the circle, as the meringue will expand during cooking. Pipe another 3 layers on the edge of the base to make a nest. Repeat until you have 8 nests.
  • Place in the air fryer and air-fry for 45 minutes at 120°C. The meringue should be crisp on the outside with a soft chewy centre. If it isn't quite cooked, air-fry for another few minutes. Remove the basket from the air fryer and allow to cool for 5 minutes, then carefully remove the parchment from the air fryer basket and place each meringue nest onto a wire rack.
  • Mix the mascarpone and Greek-style yoghurt in a bowl until fully combined. Leave in the fridge until ready to assemble.
  • When the meringue nests are completely cool, fill the centre with the mascarpone mixture and spoon over the defrosted berries and their juice. Serve.
